The Viking Bistro, the award-winning restaurant at Nashoba Valley Technical High School, has reopened to the public.

The Viking Bistro is staffed by students in the Culinary Arts and Hospitality Management programs.
A popular feature that will return this year is the Senior Menu, which is planned and carried out by a different 12th-grader each week as part of their Senior Project. The student must come up with a theme for their menu, then carry it through for the entire week.
“That goes really well,” Chef-Instructor Jeremy Bussiere said. “The people who come in for lunch like to see it, and families love it. The students’ families come in to eat so they can see their student’s work. And we get to know the students’ families, so it’s great for everyone.”
Upcoming theme lunches as part of the Senior Menu project include a breakfast food truck, with brunch burgers, chicken-and-waffle sandwiches, Monte Cristo sandwiches and more, and a fall-themed menu heavy on pumpkin and apple.
Chef-Instructor Paul Wilson agreed that students’ families have been supportive of the project, adding that staff members have embraced it as well.
“The level of pride the kids take in it, when it’s their menu, is through the roof,” Wilson said.
The Viking Bistro also has a Customer Loyalty Card with which you can get a free lunch after you purchase six lunches.
